I am so excited to tell you about the homemade peanut butter cookies I baked a couple of days ago. You should know that I am by no means, a skilled baker or cook. However, these cookies were super easy to make and the prep/baking time was less than 25 minutes.
My friend, Teresa, told me about this recipe because she knows how much I love peanut butter cookies, especially the peanut butter cookies from Subway. The good thing about these peanut butter cookies is that they are flourless and gluten-free. They are super easy to bake and only require a few ingredients that you probably already have in your fridge and pantry.
Once I got the recipe, I wasted no time going home to try them out. I must say, the cookies came out wonderful! I am thinking next time, I will try this recipe using almond butter, which is my favorite nut butter. I will let you know when I make the almond butter version. Ok, here is the recipe.
Ingredients
- 2 cups of peanut butter
- 2 eggs
- 1 cup of sugar
- Pinch of Baking Soda
- Pinch of Salt
Baking Instructions
- Pre-heat oven to 350 degrees
- Place peanut butter mixture in small, even sections on a cookie sheet
- Bake 8 to 10 minutes
- Let cool for 10 minutes
